1. Lose the last 10 pounds of baby weight so that the rest of my pre-pregnancy clothes fit. Hello Spinning bike, walking, and Pilates videos!
2. Eat less processed foods and aim for a more organic diet. We’re planning on joining a local CSA very soon.
3. Continue with my menu planning throughout 2010. As part of this, try at least 1 new recipe per week.
4. Be more frugal by cutting coupons often for grocery shopping. I use Couponsuzy.com and Coupons.com.
5. Use my camera each day (you’ll see my Flickr badge to the right updated with a daily photo). Here’s the first one
We’re spending the evening home with a recovering baby. Both Denver and I have had scratchy throats for the last several days, while Finnian caught a full-fledged cold. He was just not himself yesterday, crying almost all day as he was not able to sleep due to his congestion and coughing. Heartbreaking! I was finally able to get a smile out of him at 3am this morning after he fell asleep in my arms on our bed. He’s been improving since.
This has been the best year ever. We conceived and found out we were expecting in January, and the rest of the year was consumed with anticipating his arrival and then caring for him. I’m actually a little sad to see 2009 go, because it has been so wonderful! I am sure 2010 will contain many more adventures
We’re back in New York after a nice Christmas in Ohio. Finnian had a good time, and started sleeping though the night during our trip! What a nice Christmas present.
I’m back at work on Tuesday, but Denver has the week off so he is doing “daddy day care”. That means he’ll be cooking some of the meals, so dinner will be on the table when I get home from work J
Monday: Refried Bean Poblanos with Cheese. I thought the picture of the dish on the Cooking Light website looked scrumdiddlyumptious.
Tuesday: Seared Mahi-Mahi with Green Gazpacho Sauce. Denver made this a few months using tilapia instead of mahi-mahi back when I was still pregnant, and I’ve been looking forward to having it again since then.
Wednesday: Slow Cooker Pulled Pork with BBQ Sauce. We make this a lot.
Thursday: New Year’s Eve. Not sure what our plans are yet, so leaving this day up in the air.
Friday: Store-bought New England Clam Chowder (frozen), Cheddar Bay Biscuits. I am excited about this knock-off recipe for Red Lobster’s buttery and garlic-y biscuits!
Saturday: Grilled Chicken with Rustic Mustard Cream, cous cous. Easy-looking recipe, plus I have some whole grain mustard to use up.
Sunday: Barbecued Pork Tenderloin, Smashed Potatoes with Goat Cheese and Chives. Haven’t tried the pork yet, but it has great reviews. The potatoes are fabulous.
Did pretty well with our menu plan last week, despite a cold that came over me and Finnian. We’re well on the mend and looking forward to the fabulous plan below:
Monday: Sweet and Sour Crockpot Ribs and Bobby Flay’s Coleslaw. Haven’t tried these ribs yet, but the recipe looks promising since I was able to make the sauce Sunday evening, then threw everything in the slow cooker before work this morning. It’s a 10 hour recipe, which is perfect. The coleslaw is my favorite coleslaw ever. The only thing I do differently is buy coleslaw mix in the produce section instead of the cabbage and carrots. The red and green onion are key to this dish. Finally, bake up some corn muffins using a mix to complete the meal.
Tuesday: leftover ribs and slaw
Wednesday: Dad’s Fried Rice. Also, Peanut Butter Buckeyes for holiday party tomorrow evening. Will use melted Ghirardelli milk chocolate chips instead of the coating chocolate. Haven’t made this recipe before, but as an Ohioan I’ve made Buckeyes in the past using wax in the chocolate. Not so good.
Thursday: Party. No cooking tonight. J
Friday: Dinner at Woody’s in Cornwall. Grass-fed beef burger and onion hay: a nice way to celebrate the upcoming week’s vacation. I’m hungry for this already…nom nom.
Saturday: Baked Macaroni and Cheese. Hands down the best mac ‘n’ cheese recipe ever. Alton has it perfected, although we add a little extra panko because we like it so much. Dessert: Hazelnut Chocolate Chip Cookies. Have made these around Christmastime each of the past several years since they are addicting!
Sunday: Panko-Crusted Chicken with Mustard-Maple Pan Sauce. Tried this a few weeks back and it was delicious! I’ll serve the sauce in a dipping dish in order to keep the chicken crunchy, though.
No menu plan next week since we’re driving to Ohio on Tuesday. Will resume menu planning on 12.28.09!
